keep going

And I have, as far as the Timbales recipes is concerned (ref. posts of January 9 'nosh' and January 15 'kittens and cooking', if you have nothing else to do with your time). This recipe continues to evolve, addressing feedback from any recipients. Last time the response from family - who never shy from brutal truth - was that it was better, but the sauce could be runnier.

When you meet someone, I've decided, instead of determining your potential compatibility with the big questions designed to tease out their political leanings, religion and philosophy on life, it's probably much more useful to ask them how much of a priority, if any, tidiness is, if they like watching telly under harsh lighting or prefer bracket lamps and candles, and whether their preferred sauce has the consistency of consommé or a concrete mix.















































Returning to the Timbales, yesterday, displaying a gritty determination, I made it with bucketfuls of not-too-thick béchamel sauce. At the request of one guest, I omitted the bacon - but had some ready to add to my plate and that of the other guest. At the request of both of them, I omitted the blue cheese ( oh, how biddable I am, or just desperately keen to please), and then, with their blessing, added a soupçon of Roquefort at the table. Afterwards, with the sun streaming into my sitting room, we munched on Thornton's chocolates and discussed writing. Both friends gushed with appreciation about the meal, which of course, boosted them considerably in my esteem. Yes, ego continues to flourish.

  1. One day I hope to become middle-class enough to cook béchamel sauce, or use it casually in blog posts. Actually, I kid, since I did have a rather delicious French dish last week: Le Noodle de Pot.

  2. Oh dear - middle class, bourgeois, pretentious, and all I was trying to do was gain some ground, having confessed to serving up a scourer curry in January...

    Do let me have the recipe for Le Noodle de Pot. Sounds yummy even though I don't particularly like noodles.
